The past two rainy seasons (Nov-April) we have planted about 8 acres of Maize. Maize is the main staple grown in Zambia. Once harvested and ground it is pounded into flour which will be boiled into Nshima. Nshima is eaten with every meal as a "filler." Due to extraordinarily heavy rains this year the maize harvest is being adversely affected. In addition to attempting to grow Maize to feed the Village, each house is responsible for a garden plot. It is here that the family might raise tomatoes, cabbage, pumpkin (you can eat both the fruit and the leaves!) or onion. The children are able to develop gardening skills and eat of the fruit of their labor!
